What Is the Role of Pressure During the Sterilization Process?

In a water spray retort, pressure plays a critical role in protecting product quality and preventing package damage throughout the sterilization cycle.

Steam is fed into the retort via an external steam pipeline. Under atmospheric pressure, the maximum water temperature is only 100°C, which fails to kill heat-resistant spores such as Clostridium botulinum. Saturated steam generates standardized pressure to steadily maintain high sterilization temperatures like 121°C and 115°C, with pressure strictly corresponding to temperature. This ensures consistent accumulation of the F₀ sterilization value. In addition, the high-pressure environment prevents violent boiling of food broth.

Air is supplied independently by an air compressor, which does not raise the temperature inside the retort and only balances the pressure difference inside and outside packages. During temperature rise, air and water vapor inside flexible pouches and PP cups expand with heat. Continuous injection of compressed air creates back pressure inside the retort, keeping retort pressure slightly higher than the internal pressure of products to eliminate issues such as pouch bulging and cup rupture.

 

During the cooling phase, the temperature inside the product gradually decreases, causing the internal package pressure to drop as well. To maintain package integrity, the retort applies a controlled pressure reduction profile that matches the cooling process. Cooling water temperature reduction and pressure release are synchronized to carefully control the pressure differential between the inside and outside of the package.

Rapid pressure release is strictly avoided, as excessive pressure differences can lead to package deformation, swelling, leakage, seal failure, or product loss.

At DTS, sterilization processes are validated based on the required thermal lethality (F₀ value) rather than a fixed processing time. This approach ensures both commercial sterility and package integrity, delivering consistent and repeatable production results while reducing defects such as pouch swelling and leakage.
